After running given commands and rebooting to kernel 5.0:

System boots properly.
Resolution is 1600x900 (correct for laptop)

Went to Additional Drivers, which searched and correctly suggested Nvidia 340-107
Installed the driver.
Rebooted.
Back to 640x480 and inxi is saying nouveau

Going to remove all Nvidia and just run on nouveau.
This is more of a 2nd machine these days and mostly used for software testing.
Shall report when that is done.

Nouveau driver for the Nvidia GeForce GTX 260M
1600x900
Going to stay with this config, as obviously the Nvidia 340.107 driver does not like the 5.0 kernel in Peppermint.

I had used a live usb to help repair the grub.  Rebooted and the weird screen I had posted earlier was gone but resolution was still off.  I have decided to take the Pepp off the HP with nvidia and put it on an HP with intel graphics.  I always appreciate the help you give, thanks.

So the only problems I'm getting on all of my Desktops with Kernel 5.0.0-23 is Pulse Audio buzz, through my speakers. To fix it have gone back to the 418 Kernel, till every piece of hardware has been thoroughly tested, with Kernel 5 I'm not bothering with it till it gets fixed. Though on my Laptops running Intel only graphics, I get no weird clicking through the sound card. Here on my main PC Desktop Ryzen build, every time I boot in the speakers click, then on my refurbished to another case my old Asus media computer, the speakers continually buzz. Moved back to 418 and no sound issues at all. I know the makers of Kernel 5 have not got the resources to test every single piece of hardware, but I also think it was this Kernel that caused my Batman Game to crash three times, through Proton, Steam Play, Wine. Since moving back to 418, this game has not crashed. Is there somewhere to report bugs, crashes in Kernel 5.0.0-23? I will answer my own question. Poor Ubuntu they get hit daily with more and more crash reports, of this Kernel. Though I'm  :o as to why they would release this Kernel so soon?

No problems here either.

The 418.0-25 is all OK. I have restricted extras in and all the other sound codecs, so I'm at a loss as to why? I get buzzing through my big speakers on my media Pep machine and a strange tap or crunch sound when watching YouTube in kernel 5.0.0-25 as it has updated to, plus for the Nvidia has updated to 415.0-58-generic. On the Media Pep that is AMD and DDR3, could there be something that it don't like? 418 kernel the original kernel that Pep ten came with works flawlessly, no buzz and no tap or crunch when starting a YouTube video. 
Not only is Peppermint an addictive OS to use.
But so is this Forum :)

I remember I had buzz on 5.0-rc2, but that was gone on 5.0-rc7...
Anyway, I haven't been running rc's for sometime now.
Let's see what the future will bring...

Edit: To be honest, I haven't been using Linux in two months, so I wouldn't know... been only running BSD.

I was going to say, try the current upstream, i.e. 5.2.8... but, then I thought that maybe I shouldn't since I haven't really used it.

Thank you for the clarification Slim, appreciated.

I do boot into Linux, right now mainly to run updates once or twice a week. But, I tend to follow the releases from upstream, which means that I'm currently on the 5.2.8 kernel.
I've been doing this for some time now, so in my mind the 5.0.0 is already EOL.
My daughters machine, is also following the upstream, but there on the LTS with the longest EOL, i.e. the 4.14 series, currently 4.14.138.

Despite all this, I did remember the sound issue I had when testing the release candidates mentioned on my previous post. Then again,... probably not relevant since I'm not on amd, but intel.

The future will tell...

5.0.0 is not EOL in Ubuntu/Peppermint .. it'll be fully supported until PM10 automagically rolls you onto the next HWE kernel (whatever 19.10 uses).
