Well I don't know if my usb cable was bad or if it was just too long (needed about 20 ft from tower to usb switch) but just replaced it with a new "active" cable and everything appears to be working fine.  All types of files printing and scans are scanning.

It seems I ruined my Peppermint 8 install by trying to fix what ended up being an external problem.

If you want to move this to the "Hardware" section I would understand and be grateful.

To everyone who offered advice I sincerely thank you and apologize for wasting all of your time.

I hope that you have a permanent solution to the issue.

But no need to apologize. This sort of problem can be tricky and everyone here understands that.  ;)

 Good luck with your printing -- and if it turns out that the cable wasn't the problem, don't hesitate to come back and reopen your now (hopefully) <SOLVED> thread.

Great stuff, glad you found the problem Adam .. specially considering I was running out of ideas ;)

BTW, it's never a waste of time, specially if you post the solution .. next time I'll know to ask about USB cable length, so we learned something that may benefit someone else in the future .. which is the whole point of this forum, so thank YOU :)

Glad it's fixed adamunderwood, I learned a while back if PCNetSpec can't come up with the solution, it's hardware.
What was I thinking?

Well thank you again just the same.  Pretty much all we really use these work computers for is looking up parts and prices and checking and sending emails.  Once they are set up we really don't have to mess with any code or anything behind the scenes so to speak.  Because of this I guess I really don't learn much new other than installation related issues.  I give you guys a lot of credit for knowing and keeping up with it all, and especially sharing it with users like me who will probably never be able to return the favor.
