I have been abroad for a while, working on a small laptop having problems too, using Peppermint 8. But I will come back to that later.

For now I am going to giving a new try to install Windows 10 and Peppermint 9, along side on my ZBook laptop.
So, first I have to wipe the whole harddisk, then getting Windows 10 in UEFI-mode and installing Peppermint 9 alongside in UEFI-mode too.

My first question:  I see that a general advice is too  format in FAT32. As my laptop has 32 GB Ram, I suppose I won't be able to use all that RAM, only 4 GB, unless I format , using NTFS. On all my other computers I use NTFS and Peppermint alongside, without problems ...

Filesystem type has nothing to do with RAM, I guess you're either confusing it with the fact the you must use 64bit Windows/Peppermrint to access all your RAM .. or the fact that FAT32 has a maximum file size of 4GB (ie. you cannot have any single file larger than 4GB which can be a pain these days when some video files are way bigger than that).

For Windows, format the partition as NTFS .. it doesn't suffer from the 4GB file size limit that FAT32 does.

For Linux you'll likely want to use EXT4 for the file system .. but the Peppermint installer will do this for you.
WARNING: You are logged into reality as 'root' .. logging in as 'insane' is the only safe option.

I did follow your instruction, installed Windows 10 again in UEFI-mode and started Peppermint 9 in  a live session.
I remembered, last time to have a lot of broken entries: You said: "your UEFI BIOS is for some reason remembering a LOT of old boot entries .. and they're all pointing to the wrong place", I cleqaned the whole list and now I wanted to check if there still were false entries, pointing to non-existing Ubuntu boot entries. So I was quite astonished that almost the some list of falese entries popped up again:

How big is the drive? HDD or SSD? Did you erase the disk before re-installing or did you just re-partitioned it?

EDIT: If you boot the live-usb and launch gparted, can you clearly identify the Windows recovery partition? You DON'T want to touch that one!!!

The first question remains:
why do all those false boot entries show up again after having deleted them, just by trying to reinstalling Peppermint?

Anyway, I did delete all of them again, as shown above, wondering what my next step could be.

Is there a bios/firmware update for your system because it seems to be doing some odd stuff.

I did a bios update. Checked today again for new updates, using the installed HP service assistant:  there were none .

If your system keeps bunging \Windows back to the top of the boot order, the only solution I can think of would be to change the Windows bootloader to point at Ubuntu's bootloader, using bcdedit in Windows (EasyBCD gives you an easy GUI method for doing this).
