If you want to edit the name of the shortcut/icon:
Right click the icon>Text editor
Find the line that says "Name=Program Name" and change that line.
Save change and that should do it.

 Edit: After playing with it some more, this will not remove text completely. If you delete all the text it will display the file name.  You can edit but not remove the file name this way.

As far as removing the text (name) of the desktop item: I came to an acceptable solution by going into the Properties and reducing the text to a strict minimum. One caracter will do.
