Personally I see no benefit to a rolling release only problems .. at first it "sounds" like a good idea, but they inevitably go wrong somewhere down the line and more so as time goes by.
I've always liked the idea of a FRESH/CLEAN install every now and then to blow out the cobwebs (think all the little hacks, and dependencies, etc.)
Personally I think ANY desktop OS needs a reinstall at least biannually if not sooner .. a server where you're not making tons of changes not so much, but then an LTS will give you five years anyway.
(not to mention Ubuntu server edition nearly always upgrades cleanly and reliably .. simply because it doesn't have all thre UI stuff to contend with)
This situation is likely to change soon anyway .. snap packages are effectively going to isolate the OS from the apps to the degree where ubuntu will effectively be a rolling release anyway.
Not that I'm a fan of snap and its stupid use of disk space
