OK, I don't know what you did, but you did NOT change to an MSDOS partition table  :-\

I feel that it changes the table back to to GPT when I try to install (Since switching to msdos, I have used the "Erase disk and install Peppermint" option. Could this be fixed by manually doing the partitions?

The installer should NOT change the partition table type, so I can only presume whatever you're doing isn't working.

Change the partition table type, then WITHOUT trying to install, post the output from:

sudo fdisk -l
You could always try the 32bit version of Peppermint 6 .. this will NOT install in EFI/GPT mode, so if you get it installed it should work.
(32 bit requires Secureboot=OFF, CSM=ON, and an MSDOS partition table .. so unless we can change the partition table type there's probably no point)

Just as a check, can you re-enter Gparted and do this


on the left you'll see the partition table type listed

There's no setting in the BIOS for "Legacy BIOS" or similar is there ?

Gparted says that the hard disk is msdos.
Edit: There is no legacy bios option

Just installed Peppermint 32-bit and it's working great.
